honey roasted strawberries & maple cream
This is a rare dessert recipe from Bay, founder of ASC & self-proclaimed dessert skeptic! I am a flavor first kind of chef with a penchant for simple presentation after a complex prep, so when I started playing with strawberries late April of 2023 and found how easy this recipe was I was in love!
It’s light, creamy, and perfectly balances the salty and sweet. The best part? You can swap out strawberries for most berries, or even peaches and pears. Versatility at its finest!

Let’s Dive into the Recipe:
For the Roasted Strawberries:
Quarter those Strawberries: Chop them into quarters, nice and easy.
Prep the Baking Sheet: Line it with parchment paper. Trust me, this step saves on cleanup.
Preheat the Oven: Set it to 385°F. No higher, no lower.
Honey Time: Drizzle your strawberry quarters with local raw honey. Yum!
Roast Away: Pop them in the oven for 20-25 minutes. Your kitchen will smell amazing, promise.
For the Whipped Cream:
Get Your Ingredients Ready: Add heavy whipping cream, the best maple syrup you can find, and vanilla paste into the bowl of your stand mixer.
Whip It Good: Whip until stiff peaks form. You want it to hold its shape nicely.
Bag It: Transfer that creamy goodness into a piping bag.
Layer Up: In a cute cup (presentation is key, folks), layer your roasted strawberries with their syrup and the whipped cream.
Final Touches: Sprinkle with flaky sea salt and your choice of nuts. Serve and watch the magic happen.

1/2 cup local raw honey
Flaky sea salt (Maldon is a fave)
1 cup heavy whipping cream
4 tbsp maple syrup (the real deal)
2 tbsp vanilla bean paste
